Indulgent chocolate Easter eggs filled with creamy peanut butter and coconut - a delicious treat sure to wow everyone, including the Easter bunny!
Ingredients:
  • 1 (8 ounce) package cream cheese
  • 0.25 pound margarine, softened
  • 2 teaspoons vanilla extract
  • 2 pounds confectioners' sugar
  • 12 ounces peanut butter
  • 12 ounces flaked coconut
  • 4 cups semisweet chocolate chips
  • 2 tablespoons shortening
Instructions:
  • Using an electric mixer, blend cream cheese, margarine, and vanilla in a mixing bowl until thoroughly mixed. Gradually add confectioners' sugar and beat until evenly incorporated; mixture will become very stiff.
  • Split the batter in half and transfer each portion into its own bowl. Mix in peanut butter into one bowl and coconut flakes into the other.
  • Shape dough into egg shapes by hand and place them on cookie sheets. Freeze the molded eggs for 1 to 2 hours.
  • After freezing the eggs, melt chocolate and shortening in a double boiler; allow to cool. Coat eggs in melted chocolate, then place on waxed paper-lined sheets and freeze until firm. Store in the refrigerator after the chocolate hardens.
