Pear and Orange Delight: Embrace the whole pear (minus the core) for a luscious texture. Customize with orange zest to elevate the flavor.
Ingredients:
  • 4 pounds pears, quartered and cores removed
  • 0.25 cup granular sucrolose sweetener (such as Splenda®)
  • 2 teaspoons grated orange zest
  • 0.25 cup orange juice
  • 1 (.25 ounce) envelope unflavored gelatin powder
Instructions:
  • Add the pears to a large pot and cover with water. Boil until soft, approximately 30 minutes. Drain and blend the pears until smooth, then return to the pot.
  • Combine sugar, sweetener, orange zest, nutmeg, and orange juice in a pot. Bring to a boil and cook until slightly thickened, approximately 15 minutes, stirring occasionally. Remove from heat, then stir in gelatin until dissolved. Transfer the mixture to hot sterile jars and seal, or freeze in containers.
