Ingredients:
  • 60ml (1/4 cup) red wine vinegar
  • 125ml (1/2 cup) olive oil
  • Salt & freshly ground black pepper
  • 18 thin slices prosciutto
  • 60g butter
  • 3 ripe medium pears, thinly sliced lengthways
  • 3 radicchio, halved, washed, dried
  • 180g blue cheese (Roaring Forties, King Island brand), crumbled
Instructions:
  • Mix the red wine vinegar and oil in a jug, then season with salt and pepper to taste.
  • Preheat a non-stick frying pan over medium-high heat. Cook half of the prosciutto for 1 minute on each side until crispy. Transfer to a plate and repeat with the remaining prosciutto.
  • Melt a third of the butter in the same pan over medium-high heat until foamy. Add a third of the pear slices and sauté for 2 minutes per side until they are golden and cooked through. Transfer to a plate and continue with the remaining batches in the same way.
  • Preheat a frying pan over medium-high heat. Sear half of the radicchio, cut-side down, for 1 minute until golden brown. Transfer to serving plates. Repeat with the rest of the radicchio.
  • Arrange succulent pear slices and delicate prosciutto on a bed of vibrant radicchio. Sprinkle crumbled cheese and generously drizzle with the flavorful dressing.
