Pear, witlof and blue cheese salad with toffeed walnuts

Ingredients:
  • 100g walnut
  • 57.20 gm honey
  • 2 green witlof, trimmed, leaves separated
  • 1 radicchio treviso, trimmed, leaves separated
  • 2 corella pears, thinly sliced lengthways
  • 100g blue cheese (such as Roquefort), thinly sliced
  • 40.00 ml sherry vinegar
  • 36.80 gm walnut oil
Instructions:
  • Preheat your oven to 180°C. Line an oven tray with baking paper. Spread walnuts on the tray and generously drizzle with honey. Bake for 4-6 minutes until walnuts are beautifully caramelized. Let them cool before enjoying.
  • Place the witlof, radicchio, pear, and cheese elegantly on serving plates. Whisk together the vinegar and walnut oil in a small jug, then season with salt and pepper. Generously drizzle the flavorful oil mixture over the salad leaves, and finish by sprinkling with walnuts. Serve promptly to enjoy the exquisite flavors.
