Honey-roasted pear, hazelnut and blue cheese salad

Ingredients:
  • 75g hazelnuts
  • 4 beurre bosc pears, cored, cut into wedges
  • 4 witlof, leaves separated
  • 200g ash-coated blue cheese, thinly sliced
  • 1/2 bunch chives, cut into 2cm lengths
  • 40.00 ml sherry vinegar
  • 40.00 ml hazelnut or olive oil
Instructions:
  • Preheat the oven to 180°C and line an oven tray with baking paper. Arrange the pears on the tray, drizzle with honey, and bake for 15 minutes, turning occasionally, until tender and caramelized. Let cool before serving.
  • On a large serving platter, artfully lay out the witlof, blue cheese, hazelnuts, chives, and pears. Mix vinegar and oil, season with salt and pepper, then generously drizzle over the salad before serving promptly.
