Honey-roasted pears with caramel and pecan sauce

Warm roasted pear dessert - cozy treat for winter nights.
Ingredients:
  • 6 firm pears, peeled, quartered, cored
  • 30g butter
  • 45g (1/3 cup) pecans
  • 185ml (3/4 cup) thickened cream
  • 60g (1/3 cup, lightly packed) brown sugar
  • Thick cream, to serve
Instructions:
  • Preheat your oven to 180°C. Place the pear slices in a single layer in a medium flameproof roasting pan. In a small saucepan over medium heat, combine butter, honey, and cinnamon, stirring until melted. Pour this mixture over the pears, ensuring they are evenly coated. Roast in the oven for 20-25 minutes, turning the pears once, until they are tender and lightly golden.
  • Spread the pecans on a baking tray and bake in the oven for about 5 minutes until toasted. Then, coarsely chop them.
  • Move the pear to a bowl and cover to keep warm. Combine cream and sugar in the roasting pan, then heat over low heat until sugar dissolves and mixture is well combined. Simmer and stir frequently for 8 minutes until the sauce thickens.
  • Drizzle the luscious caramel sauce over the ripe pear, sprinkle with the crunchy pecans, and serve promptly with a dollop of cream.
