Smoked salmon, pear and kohlrabi salad

Elegant lunch: Smoked salmon salad with kohlrabi.
Ingredients:
  • 1 (about 400g) kohlrabi, peeled, cut into matchsticks
  • 2 young celery stems, very thinly sliced diagonally
  • 1 corella pear, cored, very thinly sliced
  • 4 red radishes, ends trimmed, finely shaved
  • 1 green witlof, ends trimmed, leaves separated
  • 100g baby rocket leaves
  • 80ml (1/3 cup) buttermilk
  • 2 tsp horseradish cream
  • 21.00 gm lemon juice
  • 40.00 ml finely chopped chives
  • 200g hot smoked salmon, coarsely flaked
  • 20.00 ml coarsely chopped dill
Instructions:
  • In a generous-sized bowl, toss together the kohlrabi, celery, pear, radish, witlof, and rocket.
  • Mix together the buttermilk, horseradish, lemon juice, and chives in a small bowl. Season with salt and pepper to taste.
  • Plate the kohlrabi mixture, place the salmon on top, drizzle with buttermilk mixture, and sprinkle with dill.
