Spicy roasted potatoes seasoned with chili powder, topped with melted Cheddar for a tasty brunch treat.
Ingredients:
  • 1 cup shredded Cheddar cheese
  • 5 medium red potatoes, diced with peel
  • 1 medium onion, chopped
  • 1 tablespoon garlic powder
  • 1 tablespoon kosher salt
  • 2 teaspoons chili powder
  • 0.25 cup extra virgin olive oil
Instructions:
  • Preheat your oven to a toasty 450°F (220°C) and generously grease a 9x13-inch baking dish.
  • Spread the potatoes and onions evenly in the baking dish. Sprinkle with garlic powder, kosher salt, and chili powder. Drizzle with olive oil and toss until everything is coated evenly.
  • Roast in the preheated oven, tossing every 10 minutes, until potatoes are tender and slightly crispy, for 35 to 40 minutes. Take out from the oven and promptly sprinkle Cheddar cheese on top. Allow the cheese to melt, around 5 minutes.
