Delicious lemony butter chicken - perfect for weeknights!
Ingredients:
  • 2 cups all-purpose flour
  • salt and ground black pepper to taste
  • 2 large eggs, beaten
  • 1 pound thin-sliced chicken breast cutlets
  • 2 tablespoons vegetable oil, or as needed
  • 2 cups chicken broth
  • 0.25 cup lemon juice
  • 2 tablespoons all-purpose flour
  • 4 sprigs fresh parsley
  • 1 medium lemon, cut into wedges
Instructions:
  • Combine 2 cups flour, salt, and pepper in one shallow bowl. Whisk eggs in another shallow bowl.
  • Coat chicken in flour, shaking off any extra. Dip into beaten egg, allowing excess to drip off.
  • In a large skillet over medium heat, heat oil. Pan-fry chicken until golden brown on each side for 2 1/2 to 3 1/2 minutes per side. Transfer chicken to a plate.
  • In the same skillet over medium-low heat, melt the butter. Add 2 tablespoons of flour and whisk until the mixture turns into a light golden brown paste, approximately 5 minutes. Gradually pour in chicken broth and lemon juice, whisking constantly until it comes to a simmer. Cook and stir until the sauce thickens and becomes smooth, about 10 minutes.
  • Add the chicken back to the skillet and simmer until it's fully cooked through, about 10-15 minutes.
  • Sprinkle with fresh parsley and accompany with lemon wedges.
