Treat yourself after work with a low-fat, diabetes-friendly delight to brighten your day!
Ingredients:
  • 187.50 gm wholemeal self-raising flour
  • 20.00 gm caster sugar*
  • 3.00 gm baking powder
  • 1.25 gm ground cinnamon
  • 257.50 gm reduced-fat milk
  • 2 eggs
  • 4.40 gm vanilla essence
  • olive oil cooking spray
  • 2 pink lady apples, quartered, cored, thinly sliced
  • 4 scoops low-fat vanilla ice-cream, to serve
Instructions:
  • In a bowl, sift together flour, sugar, baking powder, and 1/2 teaspoon of cinnamon. Create a well in the center and add any husks remaining in the sieve.
  • Whisk milk, eggs, and vanilla in a jug. Pour into the dry ingredients and gently mix with a fork until just combined. Be careful not to overmix.
  • Preheat a large non-stick frying pan over medium heat and lightly spray with oil. Pour 1/4 cup of batter into the pan and spread gently to about 12cm in diameter. Quickly arrange a layer of apple slices on top of the batter. Cook 2 pancakes at a time for 2 minutes on each side until firm. Transfer to a plate, cover to keep warm, and repeat with remaining batter. Serve warm with a sprinkle of cinnamon and a scoop of ice cream on top. Enjoy!
