Bake this apple Charlotte in a springform pan for a delicious twist on the classic British dessert.
Ingredients:
  • nonstick cooking spray
  • 3 cups peeled and diced apples
  • 1 lime, juiced
  • 0.75 cup all-purpose flour
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 2 large eggs
  • 0.5 cup brown sugar
  • 0.25 cup white sugar
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 350°F (175°C). Grease a 6.5-inch springform pan with nonstick cooking spray and line with parchment paper, then grease the parchment paper as well.
  • Combine apples with a splash of zesty lime juice and let them mingle. In a separate bowl, mix together flour, cinnamon, ginger, and salt, setting aside for later.
  • In a separate bowl, whisk together eggs, brown sugar, white sugar, and vanilla extract until creamy using an electric mixer. Gently fold in the dry ingredients until just combined. Pour 1/3 of the batter into the prepared pan, layer with apples, then top with the remaining batter.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Let it cool on a wire rack for 15 minutes before serving.
  • Carefully loosen the apple Charlotte from the springform pan by running a knife around the edges, then release the springform and elegantly flip the dessert onto a plate. Quickly transfer the cake to a serving platter.
