Whip up a delicious hot artichoke dip at home using canned artichokes, Parmesan, and mayo. Perfect for sharing with crackers, bread, or veggies.
Ingredients:
  • 2 (14-ounce) cans water-packed artichokes, drained
  • 8 ounce Parmesan cheese, freshly grated (about 2 cups)
  • Kosher salt and freshly ground pepper, if needed, to taste
Instructions:
  • Preheat the oven to 350°F and position the rack in the center. Skip this step if microwaving the dip.
  • Roughly chop the artichokes: Use a chef's knife to cut the hearts into small pieces.
  • Combine artichokes, Parmesan cheese, and mayonnaise in a large mixing bowl. Adjust seasoning with salt and pepper to taste. Transfer the mixture to a baking dish suitable for the oven or microwave.
  • Bake in a 350°F oven for 20-30 minutes, or microwave on high for 5-6 minutes, stirring occasionally, until the mixture is bubbly and heated through.
  • Serve immediately with a selection of crackers, endive leaves, or thinly sliced toasted bread or baguettes.
