Asparagus and goat cheese tart on puff pastry - a stunning and simple dish for brunch or dinner.
Ingredients:
  • 2 sheets frozen puff pastry
  • 2 eggs, at room temperature
  • 8 ounces herbed goat cheese, at room temperature
  • 1 ounce (about 3/4 cup grated) Pecorino Romano cheese, finely grated1 lemon
  • 1 pound asparagus, trimmed and peeled as needed
  • 1 teaspoon vegetable oil
  • 1/4 teaspoon kosher salt
Instructions:
  • Preheat the oven to 400˚F. Thaw the puff pastry at room temperature while preparing the filling by placing it on a cookie sheet in the center of the oven.
  • For the filling: Grate the lemon peel into a small bowl and keep it for later use. In a medium bowl, combine 1 egg with goat cheese, Pecorino Romano cheese, and 1 tablespoon of freshly squeezed lemon juice, and beat until smooth.
  • Prepare the tart shell: Once the pastry is pliable (roughly 20-30 minutes), place both sheets on a sheet of parchment paper, overlap ends by 1 inch to form a 17x9 inch rectangle, and seal by pressing together. Combine remaining egg with 1 teaspoon water, brush a 1-inch rim of egg wash around the pastry, fold edges inward to create a 1-inch border, using egg wash as glue. Ensure corners are sealed and brush the folded rim with egg wash for a beautiful finish.
  • Finish the tart: Spread the creamy goat cheese inside the pastry border. Coat the asparagus in oil and salt, then lay them in a single layer over the cheese. Get creative with your asparagus placement for an elegant touch.
  • Carefully transfer the tart on parchment paper to the hot cookie sheet in the oven. Bake until the tart is golden brown and flaky, about 30 to 35 minutes.
  • Serve: Sprinkle the fragrant lemon zest over the vibrant asparagus and then cut the delectable tart into elegant triangles or squares. Enjoy right away or allow it to cool on a rack for a delightful room temperature treat.
