Engage kids by letting them arrange veggies on pastry and add cheese eyes for a fun and tasty dish!
Ingredients:
  • 2 sheets puff pastry, just thawed
  • 1 Free Range Egg, lightly whisked
  • 65g pesto
  • 2 bunches Dutch carrots, scrubbed, trimmed, or 400g baby carrots, peeled, halved lengthways
  • 2 bunches asparagus, woody ends trimmed
  • 1 cheese slice
  • 1 burger cheese slice
  • Black writing icing, to decorate
Instructions:
  • Preheat the oven to 200°C and line a baking tray with baking paper. Halve the pastry sheet crossways and attach one half to the edge of the whole sheet to form a rectangle. Cut the remaining pastry into 1cm wide strips and arrange them around the rectangle to create a border. Brush lightly with egg wash.
  • Smooth the flavorful pesto onto the pastry, making sure to stay within the border. Place the vibrant carrots and crisp asparagus on top. Bake until the pastry is beautifully golden and puffy, and the vegetables are tender. Allow it to cool a bit before serving.
  • Cut the cheese slices into 1cm and 2cm discs. Place them on the tart and use writing icing to create eyes for decoration.
