Veggie Burger and Grilled Pepper Sandwiches

Make a tasty burger sandwich in 25 minutes, with a delicious topping of thinly sliced bell peppers.
Ingredients:
  • 1 package (10 ounces) frozen meatless soy-protein burgers (4 burgers)
  • 1/2 teaspoon salt
  • 4 slices (3/4 ounce each) mozzarella cheese
  • 4 whole-grain sandwich buns, split
  • 1/4 cup roasted-garlic mayonnaise
  • 1 cup grilled tricolored bell peppers or purchased roasted bell peppers
  • 1 medium tomato, sliced
Instructions:
  • Preheat grill for direct heat. Season burgers with salt.
  • Grill burgers over medium heat until heated through, 8 to 10 minutes, turning occasionally. Top with cheese and grill for 1 minute more until melted.
  • Spread the insides of the buns with flavorful garlic mayonnaise, then thinly slice the grilled peppers. Assemble each burger by layering tomato, burger patty, and bell peppers in the buns.
