Spicy Mexican-style rice with Cheddar and sour cream.
Ingredients:
  • 6 tablespoons butter
  • 2 onions, chopped
  • 2 jalapeno peppers, chopped
  • 2 (14.5 ounce) cans Mexican-style diced tomatoes, undrained
  • 1 cup uncooked white rice
  • salt and ground black pepper to taste
  • 1/2 cup water
  • 0.5 cup sour cream, or as desired
  • 0.5 cup shredded Cheddar cheese, or as desired
Instructions:
  • In a large skillet over medium-high heat, melt butter until sizzling. Sauté onions and jalapeño peppers until softened, about 3 to 5 minutes. Mix in Mexican-style tomatoes and rice, season with salt and black pepper. Pour in water to just cover the rice.
  • Simmer the rice mixture until cooked, about 40 to 45 minutes. Top with sour cream and Cheddar cheese before serving.
