Simple and delicious baked scallops simmered in wine and baked with a creamy sauce.
Ingredients:
  • 2 pounds sea scallops (about 4 cups), fresh or thawed if frozen, dry-packed
  • 1 cup dry white wine (such as a Sauvignon Blanc)
  • 1/4 teaspoon salt (omit if using salted butter)
  • 6 tablespoons unsalted butter, divided
  • 1 1/2 cups finely chopped onion
  • 2 1/2 tablespoons flour
  • 1/2 cup fine breadcrumbs
Instructions:
  • Heat your oven to 400°F.
  • Cook the scallops gently: Cook scallops in a sauté pan with wine and a pinch of salt until just tender. Place them in a casserole dish once done. Save the cooking liquid for later use.
  • Sauté the onions: Melt 3 tablespoons of butter in a sauté pan over medium heat. Add the onions and cook until softened, about 2 minutes.
  • Prepare the sauce: Sprinkle flour over the buttery onion mixture and mix gently. Cook briefly, then pour in the liquid while whisking energetically. Once thickened, add the sauce to the scallops in the baking dish and mix gently to combine.
  • Place a generous layer of breadcrumbs over the succulent scallops, then add the remaining 3 tablespoons of butter in little droplets. Let them bake in the oven at 400°F until they turn golden brown and start bubbling, which should take around 15 minutes. Serve the exquisite dish with fresh lemon slices on the side.
