Creamy scalloped potato bake with pesto and rocket

Elevate classic potato bake with a creamy pesto and rocket twist for a delicious dinner this week.
Ingredients:
  • 10g butter
  • 200ml Crème Fraîche
  • 800g desiree potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 50g baby rocket leaves, to serve
  • Basil pesto, (homemade or store-bought) to serve
Instructions:
  • Preheat your oven to 200C (180C fan forced). Butter a 6cm deep, 15cm x 24cm (base) ovenproof dish generously. In a jug, mix crème fraiche, salt, and pepper thoroughly.
  • Layer the potatoes on the bottom of the dish, followed by a layer of onions. Drizzle with the creamy mixture and continue layering until all ingredients are used up.
  • Cover the dish tightly with foil and bake for 40 to 50 minutes, or until the potatoes are just tender. Uncover and bake for an additional 20 minutes, or until the top is golden brown.
  • Top the dish with arugula and a generous drizzle of pesto before serving.
