Creamy scalloped potato tray bake recipe

Cheesy potato bake with only 5 ingredients - a quick family favorite!
Ingredients:
  • 505.00 gm thickened cream
  • 4 large red potatoes, very thinly sliced
  • 2 tsp fresh thyme leaves
  • 165.00 ml grated 3 cheese blend (see note)
Instructions:
  • Preheat your oven to 220C/200C fan-forced and generously grease a 3.5cm-deep, 21cm x 30cm baking tray.
  • In a microwave-safe jug, combine cream and garlic. Microwave on HIGH for 1 minute and 30 seconds, or until warmed.
  • Layer half of the potato slices in the prepared tray, slightly overlapping them. Sprinkle half of the thyme and cheese on top, and season with salt and pepper.
  • Pour half of the creamy mixture over the potatoes. Layer the remaining potatoes slightly overlapping on top. Pour the rest of the creamy mixture over them. Cover tightly with foil and bake for 30 to 35 minutes until the potatoes are just tender.
  • Uncover and generously sprinkle with the remaining thyme and cheese. Season with salt and pepper. Bake for an additional 15 to 20 minutes until golden and the potato is tender. Serve and enjoy!
