Indulge in a flavorful exotic breakfast to start your day in blissful calm.
Ingredients:
  • 3 bacon rashers
  • 1 tsp coriander seeds, toasted
  • 2 long red chillies, seeds removed
  • 2 avocados
  • 1/4 red onion, finely chopped
  • 1 tomato, seeds removed, chopped
  • 1/2 bunch coriander, leaves chopped
  • 21.00 gm lime juice, plus wedges to serve
  • 12 scallops without roe
  • 4 slices sourdough bread, toasted
  • Micro herbs (see note) or small coriander leaves, to serve
Instructions:
  • - Preheat the oven to 190°C and line a tray with baking paper. - Arrange the bacon on the tray and bake for 15-20 minutes until crispy and dry. - Transfer the bacon to a paper towel-lined plate to cool. - Combine the bacon and coriander seeds in a small food processor and pulse until it forms a fine dust (you may also finely chop by hand).
  • Thinly slice 1 chili for garnish, then finely chop the rest. Combine with avocado, onion, tomato, coriander leaves, and lime juice in a mortar or large bowl. Mash until it forms a coarse paste using a pestle or fork.
  • 1. Heat oil in a pan over high heat until sizzling. 2. Season scallops and sear for 30 seconds on each side until opaque. 3. Spread avocado mixture on toast. 4. Top each toast with 3 scallops. 5. Sprinkle with bacon dust, sliced chilli, and herbs. 6. Serve with lime wedges.
