Seared Scallops with Garlic Beurre Blanc

Quick and elegant seared scallops with creamy garlic wine butter sauce, ready in just 20 minutes.
Ingredients:
  • 1/2 cup Land O Lakes® Butter with Olive Oil & Sea Salt
  • 1 lb large sea scallops
  • 2 cloves garlic, finely chopped
  • 1 small shallot, finely chopped
  • 1/4 cup dry white wine
  • 1/4 cup white wine vinegar
Instructions:
  • In a large skillet over medium-high heat, melt 1 tablespoon of butter. Cook the scallops in the butter for about 5 minutes, flipping once, until they are golden brown on the outside and white and opaque on the inside. Transfer the scallops to a serving plate and cover to keep warm.
  • In a skillet, combine garlic, shallot, wine, and vinegar. Stir to scrape up brown bits. Let it simmer until the liquid is reduced by more than half. Lower the heat and add 4 tablespoons of butter. Stir until melted. Then add the remaining 3 tablespoons of butter, stir until sauce is thick and creamy.
  • Strain sauce to remove solids, then generously drizzle over scallops. Serve promptly.
