Quickly seared bay scallops in a garlic, onion, white wine and Romano cheese sauce over linguine, topped with fresh parsley and extra cheese.
Ingredients:
  • 4 tablespoons margarine
  • 3 cloves garlic, minced
  • 1 large onion, minced
  • 0.5 cup dry white wine
  • 1 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup grated Romano cheese
  • 1 (10.75 ounce) can chicken broth
  • 1 pound bay scallops
  • 1 pound linguine pasta
  • 0.25 cup chopped fresh parsley
Instructions:
  • Melting margarine in a large skillet over medium heat, saute garlic and onion until translucent, then mix in wine, salt, ground black pepper, and 1/4 cup cheese.
  • Pour in the chicken broth and gently place the scallops into the pot. Increase the heat and let it come to a rapid boil for 7 to 8 minutes.
  • While you wait, get a big pot of delicately salted water boiling. Put in the pasta and cook it for 8 to 10 minutes until it's al dente, then drain it.
  • Lower the heat for the scallop mixture and stir in the parsley. Spoon the sauce over the linguine. Sprinkle with the remaining cheese and enjoy.
