Craft a delightful Italian alfresco feast.
Ingredients:
  • 8 scampi (see note), halved, cleaned
  • 8 large green prawns
  • 8 scallops on the half shell
  • 60ml olive oil
  • 2 garlic cloves, finely chopped
  • Zest and juice of 1 lemon, (plus lemon wedges to serve)
  • 40.00 ml chopped lemon thyme or thyme
  • 40.00 ml chopped flat-leaf parsley
Instructions:
  • Preheat the oven to 200°C (or 400°C for a woodfired oven).
  • Arrange the seafood in a spacious baking dish. Combine oil, garlic, zest, juice, and thyme in a bowl, brush over the seafood evenly, and season with salt and pepper. Bake in the oven for 10 minutes (or 5-7 minutes in a wood-fired oven) until the seafood is cooked through. Sprinkle with fresh parsley and serve with lemon wedges.
