Savory anchovies and scallops elevate linguine in a delectable dish.
Ingredients:
  • 1 (16 ounce) package linguine
  • 1 (2 ounce) can anchovy fillets with oil
  • 0.5 onion, minced
  • 0.75 cup chicken stock
  • 0.25 cup white wine
  • 1 teaspoon minced garlic
  • 0.5 teaspoon dried parsley
  • 0.125 teaspoon seafood seasoning (such as Old Bay®)
  • 12 ounces bay scallops
  • salt and pepper to taste
Instructions:
  • Bring a large pot of lightly salted water to a rolling boil. Add linguine and cook until al dente, about 11 minutes. Drain in a colander in the sink.
  • In a large skillet over medium heat, melt the anchovies into the oil, then add the onion and cook until translucent. Stir in chicken stock, wine, garlic, parsley, and seafood seasoning. Add scallops, season with salt and pepper, and bring to a boil. Simmer until scallops are opaque, about 7 minutes. Serve over cooked linguine.
