Ingredients:
  • Canola oil cooking spray, to grease
  • 12 scallops, roe on
  • 500.00 ml loosely packed baby Asian greens
  • 44.00 gm sweet chilli sauce
  • 21.00 gm fresh lemon juice
  • 10.60 gm reduced-salt soy sauce
Instructions:
  • Prepare the tantalizing chilli dressing by mixing sweet chilli sauce, lemon juice, and soy sauce in a small jug. Chill in the fridge until needed.
  • Spray a large non-stick frying pan with canola oil cooking spray and heat over medium-high heat. Cook the scallops for 1 minute on each side until medium, or until desired doneness. Drizzle with 2 tablespoons of chili dressing and cook for another minute until browned.
  • Separate the Asian greens into individual bowls. Top with scallops, pour over the remaining dressing, and gently mix everything together.
