Summer mixed berry cobbler: Juicy berries baked in cakey batter for a delicious, old-fashioned dessert.
Ingredients:
  • 4 tablespoons butter
  • 0.75 cup all-purpose flour
  • 0.75 cup sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.75 cup milk
  • 2 cups of sliced fresh peaches or nectarines, or whole blueberries, strawberries, raspberries, blackberries or a combination of fruits (or a 12-ounce package of frozen berries)
  • 1 tablespoon sugar
Instructions:
  • Preheat the oven to 350°F (175°C) in the upper-middle rack position.
  • Place butter in a baking dish and let it melt in the oven. Then, take the pan out and set it aside.
  • In a medium bowl, whisk together flour, 3/4 cup sugar, baking powder, and salt. Gradually whisk in milk until a smooth batter forms.
  • Pour the prepared batter into the pan greased with melted butter.
  • Distribute fruit evenly on top of the batter and dust with 1 tablespoon of sugar for added sweetness.
  • Bake until the top is lightly golden and fruit is bubbling, about 50-60 minutes in the preheated oven.
  • Enjoy this dish either warm or at room temperature.
