Easy Fruit-Filled Pastry Heart Cookies

Rich butter and cream cheese dough filled with sweet jam, shaped into heart-cutout cookies and finished with a sprinkle of sugar.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup cold butter
  • 0.5 (8 ounce) package cold cream cheese
  • 0.125 teaspoon salt
  • 1 beaten egg
  • 6 tablespoons apricot preserves
  • 2 tablespoons white sugar, for sprinkling
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and prepare your baking sheets by either giving them a quick spray of cooking spray or lining them with parchment paper.
  • Combine flour, butter, cream cheese, and salt in a bowl. Use 2 knives or a pastry cutter to cut the mixture until the butter and cream cheese are the size of small peas. Form the dough into a ball, wrap it in plastic wrap, and chill in the refrigerator for at least 2 hours.
  • Divide the dough in half, then refrigerate one half. Roll out the other half to 1/8 inch thickness between two sheets of wax paper or parchment. Use a heart-shaped cookie cutter to make 18 cookies. Transfer the cutouts to a baking sheet and chill in the freezer briefly to set. Repeat with the other half of the dough to make another 18 cookies.
  • Arrange 18 cookies on the baking sheets, ensuring they are not touching. Gently coat each cookie with beaten egg, add 1 teaspoon of preserves in the center, cover with another cookie, press edges to seal, crimp with a fork, brush with more egg, and sprinkle with sugar.
  • Bake the cookies in the preheated oven until they turn a delicate golden brown, for about 10 to 12 minutes. Allow them to cool completely before storing in containers.
