Filo pastry filled with sweet dried fruit for a make-ahead dessert.
Ingredients:
  • 375g pkt mixed dried fruit
  • 1 lemon, juiced
  • 3 Granny Smith apples, peeled, grated
  • 2.50 gm ground nutmeg
  • 12 sheets filo pastry
  • 125g butter or margarine, melted
  • Icing sugar mixture, for dusting
Instructions:
  • Preheat oven to 200°C for the perfect cooking temperature.
  • Mix a delightful medley of mixed dried fruit, freshly squeezed lemon juice, granulated sugar, sliced apples, and a pinch of fragrant nutmeg in a bowl until thoroughly combined.
  • Take the filo pastry sheets out of the package and shield them with a dry tea towel followed by a damp one to maintain their freshness. Brush a sheet of filo pastry with melted butter or margarine, fold it in half diagonally, and brush with more butter.
  • Place a generous amount of the fruit mixture on a corner of the pastry, roll up diagonally, tuck in the ends to create a cigar-shaped roll. Brush generously with butter. Repeat with the rest of the pastry and filling.
  • Place the rolls on a wire rack set over a baking tray and bake in a preheated oven for 25-30 minutes until golden. Serve warm, sprinkled with icing sugar.
