  • 410g can pink lady apple slices in juice, finely chopped
  • 45g (1/4 cup) sultanas
  • 4 eggs, lightly whisked

  • Preheat your oven to 180C/160C fan forced and generously grease a 1.5L (6 cup) baking dish.
  • Lay out doughnut bases with the cut side facing up. Distribute apple and sultanas evenly among the bases. Place the tops back on the doughnuts and arrange them in the dish, overlapping slightly if needed.
  • In a large jug, combine eggs, cream, milk, vanilla, and caster sugar. Pour the mixture over the doughnuts in a baking dish. Place the dish in a deep roasting pan and add boiling water halfway up the side. Bake for 45-50 minutes until the center is just set. Let it cool for 10 minutes before serving.
