Apple-filled monkey bread

Apple-filled caramel dough balls: a decadent and sweet dessert.
Ingredients:
  • 1000.00 ml plain bread flour, plus extra for dusting
  • 215.00 gm caster sugar
  • 1 1/2 tsp dried yeast
  • 386.25 gm milk, warmed
  • 1 egg
  • 100g butter, softened
  • 2 Granny Smith apples, peeled, cored, chopped
  • 2.20 gm vanilla extract
  • 55g jar cinnamon sugar
  • 100g butter, extra, melted
  • 50g butter
  • 90.00 gm brown sugar
  • 126.25 gm pure cream
Instructions:
  • In the bowl of an electric mixer with a dough hook, combine flour, 1/3 cup caster sugar, and yeast. Mix well. Add milk, egg, and butter. Knead on medium speed for 3 to 4 minutes until a soft, smooth dough forms. Cover the bowl with greased plastic wrap and let it rise in a warm place for 1 hour until doubled in size.
  • In a saucepan over medium-high heat, combine apple, 1 tablespoon of caster sugar, vanilla, and 1/4 cup of water. Cook for 10 minutes until the apple softens. Remove from heat and let it cool.
  • Flatten and divide dough into 3 equal portions. Roll each into a 30cm-long log, then cut into 12 pieces. Press each into a 7cm disc. Spoon 2 teaspoons of apple mixture onto each disc, then fold and shape into balls.
  • Prepare a 22cm bundt cake pan by greasing it. Mix cinnamon sugar and the rest of the caster sugar in a shallow bowl. Put melted butter in a separate bowl. One by one, dip dough balls into the butter, making sure to coat them entirely. Then, coat the balls in the cinnamon sugar mixture and place them in the prepared pan. Repeat this process with the rest of the dough balls. Cover the pan with plastic wrap and let it sit in a warm spot for 45 minutes or until the balls have doubled in size.
  • Preheat the oven to 180C/160C fan-forced. Bake until golden brown, about 35 to 40 minutes. Allow to cool in the pan for 5 minutes, then carefully transfer onto a serving plate as directed in the notes.
  • While you wait, create the luscious caramel sauce by combining butter, sugar, and cream in a small saucepan over medium heat. Stir and cook for 2 minutes until the sauce begins to simmer, then let it simmer for an additional 5 minutes until it slightly thickens.
  • Drizzle warm caramel sauce over monkey bread, ensuring every inch is coated. Enjoy fresh or within 2 to 3 hours.
