Cinnamon and walnut baked apples

Apple filled with crunchy nuts and cinnamon sugar.
Ingredients:
  • 4 large sundowner apples
  • 60g walnut
  • 100g brown sugar
  • 3.75 gm ground cinnamon
  • 85g almond meal
  • 1 egg white, lightly whisked
  • 10g butter, cubed
  • Custard, to serve
Instructions:
  • Preheat the oven to 190°C. Core the apples with an apple corer to create a 3-4cm opening at the top, then arrange them in a small baking dish.
  • In a bowl, mix together walnuts, sugar, cinnamon, and almonds. Add the egg white and stir until combined. Fill the center of each apple with the mixture. Top each apple with a pat of butter. Bake for 35-45 minutes, or until the apples are just tender.
  • Spoon the apples into individual bowls and drizzle with the luscious custard.
