Beer & cardamom apple fritters

Irresistibly decadent apple fritters, reminiscent of apple churros. Coat in batter for a fluffy, crispy texture, then dust with Christmas-spiced sugar for the perfect finish.
Ingredients:
  • 8 cardamom pods
  • 250 g plain flour
  • 30 g cornflour
  • ½ heaped teaspoon baking powder
  • 6 heaped tablespoons caster sugar
  • 1 teaspoon ground cinnamon
  • 2 medium free-range egg yolks
  • 330 ml can of chilled lager
  • 2 large Bramley apples (about 500g)
  • 1.5 litres vegetable oil for frying
  • 150 g quality dark chocolate (70%)
  • 6 tablespoons whole milk
  • 4 tablespoons double cream
  • 30 g salted butter
  • 2 tablespoons light brown muscovado sugar
Instructions:
  • Crush and grind half the cardamom pods to a fine powder. In a bowl, combine the flour, cornflour, baking powder, 1 tablespoon caster sugar, a pinch of salt, half of the ground cardamom, and half of the cinnamon. Whisk in egg yolks and lager until a smooth batter forms; let it rest covered. Slice apples, soak in water. Mix remaining sugar, cardamom, cinnamon, and salt. Heat oil to 190ºC/375ºF. Dip apple slices in batter, fry until golden, and drain on a rack. Toss with spiced sugar. Melt chocolate and other sauce ingredients in a pan. Serve with warm fritters for dipping.
