Apple and custard ice-cube tray dessert pies recipe

Indulge in our irresistible apple and raisin puff pastry bites, made effortlessly using just two sheets of pastry and an ice-cube tray. Check out our simple video tutorial for a quick treat!
Ingredients:
  • 2 sheets puff pastry, just thawed
  • 1 egg, lightly beaten
  • 100g canned apple slices pie fruit
  • 100g vanilla custard
  • 45g (1/4 cup) sultanas
Instructions:
  • Preheat your oven to 220°C. Lightly grease a baking tray and line it with parchment paper.
  • Take 1 sheet of puff pastry and gently fold it in half. Roll it out slightly with a rolling pin until it is large enough to cover a 14-hole ice cube tray. Then, cut the remaining sheet of pastry in half lengthways, setting one half aside for another recipe.
  • Gently drape the rolled pastry over the ice cube tray and carefully press it into each hole, being mindful not to tear the pastry.
  • Fill each pastry hole generously with sweet and tangy pie apples, a sprinkle of plump sultanas, and a luscious 1-2 teaspoons of creamy custard. Brush the edges of the pastry with a golden egg wash. Seal the pie with another pastry piece, press gently, trim any excess, and freeze for an hour until the pastry is perfectly chilled and ready to bake.
  • Remove the pastry parcel from the ice cube tray and place it flat-side down on the prepared tray. Brush with the remaining egg and bake for 22-25 minutes until the pastry is puffed and golden. Serve immediately.
