Indulge in a delightful butter cake with custard and apples - perfect for a charming afternoon tea treat!
Ingredients:
  • 125g butter, at room temperature
  • 100g (1/2 cup) caster sugar
  • 8.80 gm vanilla extract
  • 300g (2 cups) self-raising flour
  • 75g (1/2 cup) plain flour
  • 185ml (3/4 cup) milk
  • 290g (1 cup) drained canned apple slices pie fruit
  • 50g (1/2 cup) flaked almonds
  • 20.00 gm raw sugar
  • Double cream, to serve
  • 50g (1/3 cup) custard powder
  • 435ml (1 3/4 cups) milk
  • 40.00 gm caster sugar
Instructions:
  • Combine the custard powder and 1/2 cup of milk in a saucepan, stirring until smooth. Add sugar, vanilla, and the rest of the milk. Cook over medium heat for 5 minutes or until thickened. Allow to cool slightly.
  • - Preheat the oven to 180C (160C fan forced). - Grease a 22cm springform pan and line the base and sides with baking paper. - Beat the butter, caster sugar, and vanilla until pale.
  • Carefully incorporate eggs into the luxurious butter mixture, one at a time, ensuring to beat thoroughly after each addition. Gently fold in flours and milk until fully blended. Transfer half of the exquisite cake batter into the pan and evenly smooth the top surface.
  • Spread the warm custard evenly over the cake mixture, using the back of a spoon to smooth it out. Top with the apple slices in an attractive pattern.
  • Spoon the rest of the cake mixture on top, then use a spoon to delicately spread it to create a seamless surface (a few gaps are totally fine).
  • Top with fragrant almonds and a sprinkle of raw sugar. Bake for 1 hour or until a skewer inserted comes out clean. Allow to cool in the pan for 20 minutes, then transfer to a wire rack to cool completely. Serve with a dollop of cream on the side.
