Apple and custard tea cakes recipe

Surprise-filled apple custard cakes.
Ingredients:
  • 150g butter, at room temperature
  • 100g (1/2 cup) caster sugar
  • 4.40 gm vanilla extract or vanilla bean paste
  • 200g (1 1/3 cups) self-raising flour
  • 80ml (1/3 cup) milk, at room temperature
  • Icing sugar, to serve
  • Dollop cream, to serve
  • 15.00 gm custard powder
  • 185ml (¾ cup) milk
  • 125.00 ml mashed apple slices pie fruit
Instructions:
  • To prepare the custard, combine custard powder and sugar in a small saucepan. Mix in 1-2 tablespoons of milk until a smooth paste forms. Gradually pour in the rest of the milk. Cook over medium heat, stirring constantly, until it reaches a gentle boil. Lower the heat and simmer for 2 minutes or until thickened. Let it cool for 1 hour, stirring occasionally, until it reaches room temperature. Gently fold in the apple.
  • Preheat the oven to 180C/160C fan forced and generously grease a 12-hole (½ cup) muffin pan.
  • In a bowl, use electric beaters to whip together butter, sugar, and vanilla until light and creamy. Add eggs one at a time, beating thoroughly between each addition. Stir in flour and milk until fully combined.
  • Fill each muffin hole with 1-2 tablespoons of batter, spreading it slightly up the sides. Then, add 1 tablespoon of custard on top and cover it with another tablespoon of the batter mixture.
  • Bake until golden, for 22-25 minutes. Let cool for 5 minutes, then transfer muffins to a wire rack to cool completely.
  • Sprinkle with powdered sugar and enjoy with a dollop of fresh cream.
