Indulge in a cozy and classic apple sponge pudding, best paired with ice cream or custard. Delightful comfort in every bite!
Ingredients:
  • unsalted butter for greasing
  • 6 eating apples
  • 100 g sugar
  • 2 large free-range eggs
  • 60 g self-raising flour
  • ½ teaspoon mixed spice
  • icing sugar for dusting
Instructions:
  • Preheat the oven to 180ºC/350ºF/gas 4 and butter a 1.5-litre baking dish. Peel, core, and chop the apples. Cook them in a pan with 50g sugar and 2 tablespoons water until softened. Transfer the apples to the dish, leaving the liquid behind. Beat eggs with the remaining 50g sugar, stir in vanilla extract, sift in flour and spices, then fold together. Pour the batter over the apples and bake for 30 minutes until a skewer comes out clean. Dust with icing sugar before serving. Enjoy warm with ice cream or custard.
