Apple and almond strudel

Indulge in a luscious apple and almond strudel for a nutty twist on a classic dessert.
Ingredients:
  • 8 sheets filo pastry
  • olive oil cooking spray
  • 800g can apple pie fruit
  • 25.00 gm almond meal (ground almonds)
  • 32.00 gm brown sugar
  • 27.20 gm sultanas
  • 1.25 gm ground cinnamon
  • 0.63 gm ground nutmeg
  • Low-fat custard or ice-cream, to serve
Instructions:
  • Preheat the oven to 200°C and prepare a baking tray with parchment paper.
  • Lay a sheet of filo pastry on the workbench. Give it a light spray of oil. Top with another sheet of pastry, spray, and fold in half from the short side to create a square. Repeat with the rest of the pastry sheets.
  • Mix together the apple, almond meal, sugar, sultanas, cinnamon, and nutmeg in a bowl. Evenly spread one-quarter of the apple mixture onto a pastry square, leaving a 3cm border at the top and bottom edges.
  • Gently fold in the sides and tightly roll up to seal in the delicious filling. Place each rolled pastry, seam-side down, on the prepared tray. Repeat with the rest of the pastry and apple mixture.
  • Spritz strudels with oil and bake for 15-20 minutes until pastry is golden and crisp. Enjoy with low-fat custard or ice cream.
