Apple-Almond Galette

Rustic apple and almond tart: a classic, not overly sweet delight.
Ingredients:
  • 1 1/2 cups Gold Medal™ Organic All-Purpose Flour
  • 2 tablespoons sugar
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1/2 cup cold butter, cut into pieces
  • 1/2 cup cold buttermilk
  • 1/2 cup slivered almonds
  • 3 cups thinly sliced peeled apples (2 large)
  • 1/2 cup sugar
  • 1/4 teaspoon fine sea salt
  • 1 egg, slightly beaten
Instructions:
  • Mix flour, 2 tablespoons sugar, baking powder, and 1/2 teaspoon salt in a medium bowl. Use a pastry blender or fork to cut in butter until the mixture resembles coarse crumbs. Add buttermilk and stir until dough forms. Knead the dough until smooth, about 5 to 10 times. Shape into a flattened round, wrap in plastic, and refrigerate for about 45 minutes until firm and cold.
  • Preheat oven to 425°F. Place a large piece of cooking parchment paper on a baking sheet. Roll out the chilled dough with a floured rolling pin on a lightly floured surface into a 14-inch circle. Gently lift one side of the dough onto the rolling pin, then transfer it to the prepared baking sheet.
  • In a small food processor or blender, finely chop the almonds. Set aside 2 tablespoons for topping. Spread the rest onto the center of the dough, leaving a 2-inch border. In a medium bowl, coat the apples with 1/2 cup sugar and 1/4 teaspoon salt. Arrange the apple slices on top of the almonds and sprinkle the reserved 2 tablespoons of almonds on top.
  • Fold over a 2-inch edge of the dough to cover the filling, creating pleats as needed. Brush the crust with egg wash. Bake for 30 to 35 minutes until the crust is golden brown and the apples are soft. Allow it to cool for 10 minutes, then slice into wedges and serve warm.
