Apple and almond galette

French apple tart: Stunning presentation, irresistible flavor.
Ingredients:
  • 25g plain flour, plus extra for dusting
  • 375g block frozen puff pastry, thawed
  • 2 eggs, plus 1 extra yolk
  • 150g unsalted butter
  • 200g caster sugar
  • 4.40 gm vanilla extract
  • zest and juice of 1 lemon
  • 30.00 ml plain flour
  • 125g almond meal
  • 4 golden delicious apples, peeled
  • 2.50 gm ground cinnamon
  • 40.00 ml flaked almonds
  • Icing sugar, to dust
Instructions:
  • Sprinkle flour on a clean surface, roll out the pastry into a 25cm x 30cm rectangle. Transfer it to a baking sheet lined with parchment paper, then prick the center with a fork. Chill in the refrigerator for 30 minutes.
  • Preheat oven to 190°C. Bake pastry until golden, about 15 minutes. Remove from oven and gently press down to release any air. Lightly brush the top with the beaten egg yolk.
  • Combine 125g of butter and 125g of caster sugar in a food processor with vanilla and lemon rind. Pulse until mixed, then add eggs one by one, followed by flour and almond meal. Process until smooth.
  • Cover the pastry base with the mixture, ensuring to leave a 1cm border.
  • Slice the apples thinly and toss them in freshly squeezed lemon juice. Arrange the apple slices on top of the almond mixture, overlapping them slightly. Finally, chop the remaining butter and scatter it over the apples.
  • Combine the remaining sugar with cinnamon in a small bowl, then sprinkle the mixture over the apples. Bake for 15 minutes, then sprinkle with almonds and bake for an additional 15 minutes.
  • Let it cool for a bit. Finish with a sprinkle of powdered sugar before enjoying.
