Irresistible fruit-filled cream cheese pastry nuggets with a crispy twist are a must-try.
Ingredients:
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup butter
  • 0.5 cup confectioners' sugar
  • 1 (12.5 ounce) can apricot fruit filling (such as Solo®)
  • 0.25 cup confectioners' sugar for dusting
Instructions:
  • In a large bowl, combine cream cheese and butter, then use an electric mixer to whip until smooth and creamy. Add 1/2 cup of confectioners' sugar and continue to beat until well incorporated. Gradually mix in the flour until fully combined. Cover the bowl and refrigerate for at least 3 hours or overnight before proceeding.
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Roll out the chilled dough on a well-floured board to 1/8-inch thickness. Use a pizza wheel to cut the dough into 36 squares measuring 2 1/2 inches each.
  • Place a generous 2 teaspoons of filling in the center of each square, making sure not to overfill. Fold opposite corners into the middle, pinching the dough together at the center to encase the filling. The filling should slightly peek out at each end. Transfer the cookies to an ungreased baking sheet.
  • Bake in the preheated oven for 12 minutes until set but not brown. Let cool on racks, then sprinkle 1/4 cup powdered sugar over the cooled kolacky.
