Traditional Czech Christmas pastries passed down from my family. Easy and delightful recipe to enjoy. Requires spacious workspace.
Ingredients:
  • 2 (8 ounce) packages cream cheese, room temperature
  • 2 cups unsalted butter, softened
  • 4 cups all-purpose flour
  • 1 pound chopped walnuts
  • 1 egg
  • 0.5 cup honey
  • 1 (12 ounce) can poppyseed filling
  • 1 egg white
  • 0.5 cup confectioners' sugar for dusting
Instructions:
  • Combine cream cheese and butter in a large bowl until fully incorporated. Feel free to use your hands or a wooden spoon. Gradually add flour, working in 1 cup at a time. Once the dough starts to firm up, transfer it to a floured surface and knead until smooth and not sticky. Knead the dough for 5 minutes to ensure proper texture.
  • Preheat the oven to 350 degrees F (175 degrees C). Use a food processor to finely crush the walnuts. Mix the crushed walnuts with the egg and honey. Roll out the dough on a floured surface to 1/4 inch thickness. Cut the dough into 3x3 inch squares. Fill the center of each square with a teaspoon of either walnut or poppyseed filling. Roll the squares up and seal the edges to form either squares or triangles. Arrange the cookies 2 inches apart on ungreased cookie sheets. Brush the tops with egg white before baking.
  • Bake in the preheated oven for 15 to 17 minutes until lightly browned. Once cooled, sprinkle with confectioners' sugar.
