Delicious lattice apple dessert filled with mixed dried fruit, topped with flaky shortcrust pastry, baked to perfection. Elevate your dessert game with this stunning treat that tastes like apple pie but looks even more impressive.
Ingredients:
  • 120g (3/4 cup) gourmet selection mixed dried fruit
  • 34.40 gm demerara sugar, plus extra to sprinkle
  • 1 orange, rind finely grated
  • 21.00 gm fresh orange juice
  • 0.63 gm mixed spice
  • 4 large green apples
  • 1 sheet frozen ready-rolled shortcrust pastry, partially thawed, cut into 1.5cm strips
  • 1 egg, lightly whisked
  • Vanilla ice cream or custard, to serve
Instructions:
  • Preheat the oven to 180C/160C fan forced. Line a baking tray with baking paper, then mix dried fruit, sugar, rind, juice, and mixed spice in a small bowl.
  • Remove the top 1cm of each apple and discard. Core the apples and use a melon baller to create a hollow center, leaving a 1cm border. Arrange on a tray and fill with the fruit mixture.
  • Arrange half of the pastry strips closely together on a work surface. Weave the remaining strips up and under each strip to create a lattice effect. Using a 7-8cm round cutter (depending on apple size), cut 4 rounds from the pastry. Place a lattice disc on top of each apple. Brush with egg, sprinkle with extra sugar, and bake for 25 minutes or until the pastry is golden and apples are tender. Serve with ice-cream or custard.
