Make these Easy Blueberry Almond Muffins using Betty Crocker™ Wild Blueberry Mix for a quick, delicious treat. Bursting with juicy blueberries and almond flavor, these fluffy muffins are a family favorite for any occasion.
Ingredients:
  • 2/3 cup water
  • 1/3 cup vegetable oil
  • 1/4 teaspoon almond extract
  • 1 box (16.9 oz) Betty Crocker™ Wild Blueberry Muffin & Quick Bread Mix
  • 1/4 cup frozen wild blueberries, rinsed and tossed in 2 teaspoons flour
Instructions:
  • Preheat the oven to 375°F while lining a 12-cup muffin tin with paper baking cups and giving them a light spray of nonstick cooking spray.
  • Combine water, vegetable oil, eggs, and almond extract in a mixing bowl. Add dry blueberry muffin mix and gently stir until just combined, leaving the mixture slightly lumpy.
  • Remove blueberries from muffin mix, give them a quick rinse, and gently fold into the batter. Use a muffin scoop to divide the batter evenly among the muffin cups. Sprinkle the top with 1/4 cup of floured blueberries.
  • Bake until golden and a toothpick comes out mostly clean, 20-25 minutes.
