Gluten-free banana-blueberry almond flour muffins: a quick and easy treat with a healthy twist.
Ingredients:
  • 1 cup almond meal
  • 0.5 teaspoon ground flax seed
  • 0.5 teaspoon chia seeds
  • 0.25 teaspoon baking soda
  • 2 eggs
  • 1 tablespoon honey
  • 0.5 teaspoon apple cider vinegar
  • 0.5 ripe banana
  • 0.75 cup fresh blueberries
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line 4 muffin cups with paper liners.
  • In a small bowl, combine almond meal, flax seed, chia seeds, and baking soda. In a separate bowl, whisk together eggs, honey, and apple cider vinegar. Stir the almond meal mixture into the egg mixture until just mixed. Mash a banana into the batter and fold in blueberries. Scoop the batter into the muffin cups.
  • Bake in the preheated oven for about 15 minutes until slightly browned. Allow muffins to cool in the pan for 30 minutes.
