Wholesome blueberry banana bars packed with oats, figs, almonds, and sunflower seeds - perfect for a nutritious breakfast or snack on the run.
Ingredients:
  • 1.3333333730698 cups rolled oats
  • 0.33333334326744 cup coarsely chopped dried figs
  • 0.25 cup coarsely chopped almonds
  • 0.25 cup sunflower seeds
  • 1 cup mashed ripe bananas
  • 0.33333334326744 cup smooth peanut butter
  • 2 tablespoons honey
  • 2 large egg whites
  • 0.66666668653488 cup fresh blueberries
  • 1 tablespoon flax seeds
  • 1 tablespoon sunflower seeds
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C). Prepare your 8-inch square baking pan by lining it with parchment paper, ensuring there's a 1-inch overhang on the sides for easy removal later.
  • Combine oats, figs, almonds, and 1/4 cup sunflower seeds in a bowl.
  • Combine ripe bananas, creamy peanut butter, and sweet honey in a saucepan. Heat over medium-low until velvety and fully melted, around 5 minutes. Remove from heat.
  • To start, beat egg whites in a bowl until they form soft peaks. Gently fold in the banana mixture and continue to whisk until the mixture is velvety. Add the oat mixture and stir until everything is evenly blended. Carefully fold in the blueberries. Transfer the batter into the prepared pan and sprinkle the top with flax seeds and 1 tablespoon of sunflower seeds.
  • Bake until golden brown, approximately 30 minutes in a preheated oven. Allow to cool completely before cutting into bars.
