Easy Boston Cream Poke Cake

Simple and delicious Boston cream poke cake using cake mix and pudding for a crowd-pleasing treat.
Ingredients:
  • 1 (15.25 ounce) package yellow cake mix
  • 1 cup water
  • 3 large eggs
  • 0.25 cup vegetable oil
  • 4 cups milk
  • 2 (3.5 ounce) packages instant vanilla pudding mix
  • 2 cups semisweet chocolate chips
  • 1 cup heavy whipping cream
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 9x13-inch pan.
  • In a large bowl, blend cake mix, water, eggs, and oil with an electric mixer until smooth. Transfer batter to the prepared pan.
  • Bake in the preheated oven for about 30 minutes until a toothpick inserted into the center comes out clean. Allow to cool for 15 to 30 minutes before serving.
  • Prepare the pudding by whisking together the milk and pudding mix until slightly thickened. Poke holes all over the cake using the handle of a wooden spoon. Pour the pudding mixture over the cake, making sure to fill the holes, and spread it evenly. Chill in the refrigerator until firm, approximately 1 hour.
  • Once the cake is nearly set, prepare the ganache by placing chocolate chips in a glass bowl.
  • In a small saucepan, gently heat the cream on medium-low heat, stirring often, until bubbles start to form, approximately 3 minutes. Pour the hot cream over the chocolate chips and whisk until the mixture is smooth.
  • Smoothly coat the cake with the rich ganache.
