Boost kids' veggie intake with this hidden broccoli bolognese twist!
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 1 carrot, coarsely grated
  • 500g beef mince
  • 1 head broccoli, chopped
  • 525g jar Tomato and Garlic Bolognese Pasta Sauce
  • 375g dried spaghetti
  • Finely grated parmesan, to serve
  • Fresh basil leaves, to serve
Instructions:
  • In a large frying pan over medium heat, sauté onion and carrot in oil until very tender, stirring occasionally, for 8 to 10 minutes.
  • Turn up the heat to medium-high, then add the mince. Sauté while breaking it up with a wooden spoon for 5 to 6 minutes until it's nicely browned. Toss in the broccoli and cook for 2 more minutes. Mix in the pasta sauce and season with salt and pepper. Lower the heat to simmer for 10 minutes until the broccoli is tender.
  • Cook the pasta in a large pot of boiling water until tender. Remember to reserve 1/4 cup of the cooking water before draining.
  • Pour the reserved cooking water into the mince mixture and simmer for 2 minutes. Mix the mince mixture with pasta, then serve it sprinkled with Parmesan and basil. Enjoy!
