Irresistible Brussels sprout salad with bacon, raisins, and creamy dressing - a game changer for Brussels sprout skeptics!
Ingredients:
  • 3 cups Brussels sprouts, halved
  • 4 slices bacon
  • 1 cup raisins
  • 1 cup coleslaw dressing
Instructions:
  • Set up a steamer in a saucepan, adding water just below the steamer. Once the water boils, steam Brussels sprouts with the lid on until tender, which should take 6 to 8 minutes. Drain and gently pat Brussels sprouts dry.
  • Cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned for approximately 10 minutes. Transfer to a paper towel-lined plate to drain and cool.
  • Toss Brussels sprouts in the skillet with the flavorful bacon grease over medium heat for about 1 minute until nicely coated. Drain on a paper towel-lined plate.
  • Dice the chilled bacon and mix with Brussels sprouts and raisins in a bowl. Drizzle coleslaw dressing over the mixture and toss well. Chill in the fridge for a minimum of 1 hour to let the flavors blend.
