Crunchy noodle, cabbage and tamari-roasted seed salad

Vibrant salad perfect for any meal, including barbecues. Light and fresh, no need to skimp on flavor!
Ingredients:
  • 125.00 ml raw nibble mix (see note)
  • 40.00 ml tamari
  • 42.00 gm lime juice
  • 1/2 tsp sesame oil
  • 18.40 gm rice bran oil
  • 10.00 gm caster sugar
  • 1 garlic clove, crushed
  • 1cm piece fresh ginger, peeled, finely grated
  • 1/4 red cabbage, finely shredded
  • 1 small head broccoli, florets and stems thinly sliced
  • 4 Brussels sprouts, trimmed, finely shredded
  • 2 green onions, thinly sliced diagonally
  • 1/2 x 100g packet original fried noodles
Instructions:
  • Preheat your oven to 220C/200C fan-forced and line a baking tray with parchment paper.
  • Coat nibble mix with half of the tamari in a bowl, then spread it out on a prepared tray. Roast for 5 minutes, stirring halfway through, until toasted.
  • In a small bowl, combine lime juice, sesame oil, rice bran oil, sugar, garlic, ginger, and the remaining tamari. Whisk until the sugar is dissolved.
  • Combine cabbage, broccoli, Brussels sprouts, onion, noodles, and most of the roasted nibble mix in a large bowl. Mix well. Drizzle dressing over the salad and mix again. Finish by sprinkling the remaining roasted nibble mix on top. Serve promptly.
