Weeknight-friendly kale stir-fry with cabbage, sweet onions, and chicken broth for an easy and delicious meal.
Ingredients:
  • 3 tablespoons olive oil
  • 2 cloves garlic, smashed
  • 0.25 head cabbage, cut into strips
  • 1 bunch kale, cut into strips
  • 2 medium sweet onions (such as Vidalia®), cut into strips
  • 0.25 cup chicken bone broth
Instructions:
  • In a deep frying pan or wok over medium-high heat, sizzle garlic in olive oil until golden, about 1 minute. Transfer to a plate, chop, and reserve.
  • Add the cabbage to the pan and stir-fry briefly, then introduce the kale and onions. Continue to stir-fry until the kale becomes vibrant green and tender. Pour in the chicken broth, salt, and red pepper flakes, cover, and allow it to steam for a few minutes. Finish by stirring in the chopped garlic before serving.
